Peanut Brittle Cookies


1 cup brown sugar
1 cup granulated sugar
1 cup shortening
1/2 cup chunky-style peanut butter
2 eggs
2 cups flour
1 teaspoon salt
1 tablespoon baking powder
1 cup crushed peanut brittle

Cream together brown sugar, granulated sugar and shortening. Add 1/2 cup chunky-style peanut butter. Mix in 2 eggs, one at a time. Mix and sift 2 cups of flour and 1 teaspoon salt. Add 1 tablespoon baking powder. Add all of the dry ingredients to the cream mixture. Add 1 cup crushed peanut brittle. Roll into small balls and place on greased cookie sheet. Flatten balls with fork. Bake 15 minutes at 350F degrees.

Would make this again.
I have made this recipe several times and it is a huge hit with both children and adults. I have been asked to bring it to an annual cookie exchange for the past three years. The cookies are crispy and hold up for several days. Being a butter-cook and not one who typically uses shortening, I was skeptical at first; however, I think the cookies are worth a try. five stars
