A ball-shaped cookie very similar to a cake pop. A cake batter is baked in a pan and then the resulting cake is scooped up and rolled into balls while still warm. Make sure you read the tips in the notes *.

Ingredients

  • 2 large eggs

  • 1 cup granulated sugar

  • 1 teaspoon vanilla

  • 1/4 teaspoon almond extract

  • 1 cup chopped walnuts or pecans

  • 1 cup snipped dates

  • 1 cup shredded coconut

  • additional granulated sugar for rolling

Directions

  • Beat eggs well, then add sugar gradually while beating until fluffy. Stir in remaining ingredients and turn into ungreased 2-quart casserole. Bake in preheated 350 oven for 22-25 minutes or until a pick inserted into the center picks up a few moist crumbs. Cookies will not roll into balls if this is too dry so if you’re used to baking cakes, you want to slightly underbake this. Remove from oven and stir well with wooden spoon. Cool until easily handled, form into small balls, and roll in additional sugar. Cool thoroughly.

Notes

  • * Tip: if you accidentally overbake the cake and the resulting mixture is too dry to roll into balls, take a page from the cake-pop book and stir in a little cream cheese frosting to add moisture. You can make your own, or just buy a container of store-bought frosting.

I made these cookies and loved them. The trick is not to bake them quite so long. The dough needs to be gooey and not hard. Bake for about 23 minutes. Let the cookie mix cool before you try to form it into balls. Flavor is terrific!
