Chocolate-Dipped Marshmallows, from Coming Home with Gooseberry Patch

Makes about 36

1 cup semi-sweet or white chocolate chips
2 teaspoons oil
1 (10-ounce) package marshmallows
Garnish: mini candy-coated chocolates, candy sprinkles

Combine chocolate chips and oil in a microwave-safe bowl. Microwave on medium setting for one to 1-1/2 minutes until chocolate is softened; stir until smooth. With a candy dipping tool or toothpick, dip marshmallows into chocolate to cover completely. Sprinkle with desired garnish; set on wax paper until firm.

Would make this again.
I made these just yesterday for a cookie exchange and they were amazing, better than I expected. We did white, chocolate, mint, and butterscotch chips and the butterscotch was everyone's favorite. I found the dipping tools did not work and had the best luck just dropping them in and fishing them out with a spoon worked best. Great activity for kids and no baking at all. five stars

Would make this again.
I made these yesterday as part of my Christmas baking and they are marvelous, the kids love not only enjoyed eating them but also making them. We did not use candy but used Christmas sprinkles and they were wonderful, I've already had people asking me for the recipe. For those who don't have a candy dipping tool but don't find that toothpicks are long enough to protect little fingers from hot chocolate, we used fondue forks and it worked great. five stars
