Quick Peanut Butter Cookies

Flourless cookies pack a real peanut-buttery punch.

Makes about 70

1 cup peanut butter
1 cup sugar
1 large egg, slightly beaten
1 teaspoon baking soda

Preheat oven to 350 degrees and grease baking sheets. In a mixing bowl, beat peanut butter and sugar until blended. Beat in egg and baking soda. Roll level teaspoons of dough into balls and arrange about 1 inch apart on prepared cookie sheet. Flatten balls to about 1-1/2 inch diameter with a fork dipped in flour making a criss-cross pattern. Bake until puffed and golden, about 10 minutes. Cool cookies on baking sheet for about 2 minutes and remove to racks.

Would make this again.
Great :) Made this with my 8 year old cousin and he LOVED it <3 It's a quick, easy, and fun way to make cookies with little ones. :) I skipped out on the baking soda, and instead of regular sugar I used brown sugar :) it's WAY better that way. Hope this is helpful <3 5 stars

I used this recipe -- it came out GREAT --- it was easy and I did get 70 cookies in fact I got more than 70. Everyone loved them but I'm sticking to using the flour .... its just fun with the kids. But the recipe is great. LOVE IT!!!! 5 stars

This is a family favorite! I started making this recipe 4 years ago and it's been a crowd pleaser. You must let the cookies cool 2 minutes or longer on the sheet or they will fall apart.

Even better as a kiss cookie (made with Hershey's Kisses in the middle right after they're done baking).
