Choco-Mint Snaps

Makes about 72

4 (1-ounce) squares unsweetened chocolate
4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 1/4 cups vegetable shortening
2 cups sugar
2 large eggs
1/3 cup light corn syrup
2 1/2 tablespoons water
2 teaspoons peppermint extract
1 teaspoon vanilla extract
Additional sugar for rolling

Melt chocolate squares in the top of a double boiler over simmering water; set aside to cool.
Preheat oven to 350 F. In a small bowl whisk together the flour, baking soda and salt; set aside. In a large mixing bowl, using an electric mixer at medium speed, cream the shortening and 2 cups sugar until light and fluffy. Add eggs and blend well. Add reserved chocolate, corn syrup, water, and extracts and blend well. Stir in flour mixture until just blended. Shape dough into 1-inch balls; roll in additional sugar and place about 2-inches apart onto greased baking sheets. Bake for 9 to 11 minutes. Cool a few minutes on baking sheet and transfer to wire racks to cool completely.

was here earlier, and I printed and tried this recipe. It was amazing! I originally made them for my neighbors, but I ended up sneaking into the fridge in the middle of the night and stealing a few. I love these! Though I tried vegetable oil instead of shortening. They're delicious! I am so glad I found this recipe. five stars

These cookies are soooo good - a new Christmas favorite. I thought they tasted like a peppermint patty. They are crusty on the outside and chewy on the inside. They were great to make with the kids too - they did the sugar rolling and loved it. I added red and green sugar in with the white and they looked pretty. I will be making these every Christmas! Thanks for the recipe. five stars

These cookies are delicious!!! hard to stir at the end, but it's worth it. I got too impatient rolling the balls in sugar, so I finally put a little sugar in a ziploc plastic baggie, along with a batch of balls, and shake! very easy! (My mom does this with other foods.) Thanks for submitting your recipe- it is GREAT! five stars

These are great!! I made a trial batch but I will definitly make these for Christmas. Delicious!! Is there anything better than chocolate and mint??? Besides Chocolate and Raspberry that is!!! five stars

Would make this again.
VERY tasty, but very wet recipe. Balls were sticky & only managable after dropped in the sugar. Just takes a little more time to form the balls than other recipes. Despite this, I would definitely make it again. four stars
