Potato Candy

1/4 cup cooked white potatoes
confectioners sugar
1 tsp vanilla
peanut butter

Mash potaoes, add vanilla, and approximately 1 box of confectioners sugar until soft dough is formed. Divide dough in fourths. Roll between wax paper until 1/8 inch thick. Spread thin layer of peanut butter on each layer. Roll up like jelly roll. Refrigerate overnight. Cut into pieces and serve - may sprinkle with confectioners sugar if desired.

Would make this again.
Years ago I remember Potato Candy being made at Christmas. I don't know if powder sugar was in existance then or not but I remember it being good. I haven't made it for a while and couln't remember where my recepie was. I was very glad to find one. five stars

This is one of my family favorite candies! Our mom used to make it every Christmas. A variation is to lightly sprinkle coconut over the peanut butter before rolling it up. five stars

Love this! Very Very sweet! Learned this from my grandma. Easy kid-friendly treat. Being a chocolate lover--I sometimes dip one end of each piece into melted chocolate. five stars

I could not believe it when I found this recipe online! I was so excited to see it!! These used to be one of my late husband's favorites at Christmastime, and my former mother-in-law used to make them all the time. I am putting this recipe in my recipe book, and will be making these for my family myself every year from now on. five stars

I have been making potato candy for years. This is a treat any time of the year using left over mashed potatoes. Just remember to keep it refrigerated, especially in the summer. five stars
