1/2 cup shortening
1 cup light brown sugar, packed
1 egg
1 teaspoon vanilla
1 8-ounce can of crushed pineapple, drained (save the juice)
2 cups flour
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
GLAZE:
3 cups powdered sugar
3-4 tablespoons pineapple juice
Preheat oven to 400. Lightly spray cookie sheet with non-stick cooking spray. Cream shortening and sugar until light, then beat in egg and vanilla until light and fluffy. Add drained pineapple and mix well. Stir in flour, baking powder, soda and salt. Mix well. Drop by teaspoonfuls on cookie sheet. Bake 8-10 minutes or until golden brown. Don't overcook. Remove and cool for about 5 minutes before glazing.
For the glaze:
Combine powdered sugar and pineapple juice in mixture bowl. Mix well. Brush glaze over cookies while still warm.

Would not make this again.
These cookies come out moist and are good. But you just can't taste the pineapple, I was dissappointed. And I think that white sugar instead of brown sugar would help the flavor. Some Pineapple extract would help alot!

I am a 48 year old Mother and Grandmother. For many years my own Grandmother made these cookies. My family loved them. I am glad to have found the recipe. For years no one in our family knew how to make them. They are great and we think of Grandma every time we have them. They are a by far a "5"

Would not make this again.
Was excited to make these cookies for Christmas. Maybe substitute brown sugar with regular sugar, as they just didn't go over well. No-one ate them. You can taste the pineapple, but was just not a big hit like some of the others on this site.

Taking into account some of the reviews, I added orange flavoring, w/the vanilla, and also added coconut to the batter. The orange flavoring and coconut truly added to the recipe.
