Coconut Sarah Bernhardts

makes 36

1-1/4 cups unsweetened dessicated coconut
1/3 cup granulated sugar
1 egg white
1/2 teaspoon vanilla
12 ounces bittersweet chocolate
1/4 cup whipping cream
2 tablespoons butter, softened
1 tablespoon rum
2 teaspoons solid vegetable shortening

Pre-heat oven to 350 F and line 2 baking sheets with parchment paper. In a large mixing bowl, sitr together coconut, sugar, egg white and vanilla until combined. Drop by teaspoonfulls onto prepared pans. Bake 7 minutes or until bottoms are lightly golden. Allow to cool on baking sheets. Place 8 ounces of the chocolate in a mixing bowl and chop so that the mixture forms small chunks. In a small saucepan, heat cream with the butter just until the butter melts and bubbles form around the edge of the pan. Pour hot cream over the chocolate and whisk until smooth. Stir in rum. Cover and refrigerate about 1 hour or until firm. Place 1 teaspoon of chocolate mixture on top of each cookie. Smooth to form a dome shape. Refrigerate about 1 hour or until firm. Line cooled baking sheets with waxed paper. In the top of a double boiler over hot water, melt the remaining 4 ounces of chocolate with the shortening. Allow to cool for 3 minutes. Set cookie on a fork and spoon the melted chocolate over the cookie until completely coated. Place on waxed paper. Refrigerate until chocolate sets, about 2 hours.

 

Mocha Meringues

makes 30 meringues

2 large egg whites, room temperature
1/4 teaspoon cream of tartar
1/4 teaspoon vanilla
2 tablespoons sifted cocoa powder
1/2 cup granulated sugar
instant coffee granules

Preheat oven to 275 F. Line 2 baking sheets with parchment paper. In a large bowl using an electric mixer, beat together egg whites, cream of tartar and vanilla at medium-high speed until soft peaks form when beaters are lifted. Gradually beat in cocoa powder and sugar, until soft peaks form. Drop by heaping tablespoons 1 inch apart onto prepared baking sheets. Sprinkle with coffee granules. Bake 20 to 25 minutes or until meringue is dry and firm to the touch. Allow to cool 5 minutes on baking sheets, then remove to wire racks to cool completely. Store in airtight containers at room temperature.

After Christmas Organizing

The gifts have been opened. Leftovers chill in the fridge. Before you start focusing on the new year, try these tips to organize next Christmas.

1. Make a list of people who sent you Christmas cards. Add anyone else you'll send cards to next
year. Input the list into your computer. Shop for cards at after Christmas sales.

2. Check your inventory of wrapping supplies. Buy them now at 70% off in most stores.

3. Make sure you have enough storage containers for all your decorations. Storage supplies go on
sale every January.

4. Open your planner. Start a shopping list for next Christmas. List names. Shop or at least note gift
ideas throughout the year.

5. Establish a budget for next Christmas. Include gifts, cards, postage, shipping costs, gift wrap,
special meals, holiday clothing and baking supplies. Set up a savings account and arrange for monthly
direct deposit.

6. Ask family members what were their favorite and least favorite activities this season. Make a note to
focus on preferences and eliminate the least-liked next year.

7. Write Christmas goals in your 2004 planner. For example, July 15th, complete gift list; October 15th, address cards; November 15th, finish shopping; December 8th, reward self with spa day.
